Everybody knows my loooove for <a href='http:\/\/en.wikipedia.org\/wiki\/Cr%C3%A8me_fraiche' target='_new'>cr\u00e8me fraiche<\/a> and <a href='http:\/\/en.wikipedia.org\/wiki\/Morchella' target='_new'>morels<\/a>.\n<\/td>\n<td valign='top'><img src='http:\/\/quantum-bits.org\/wp-content\/uploads\/2010\/03\/face-cook.png' align='top'><\/td>\n<\/tr>\n<\/table>\n<p>Tonight&#8217;s improvisation: &#8220;<b>C\u00f4tes de veau aux morilles<\/b>&#8221; with a side of &#8220;pommes de terre nouvelles saut\u00e9es&#8221; and a nice glass of <a href='http:\/\/en.wikipedia.org\/wiki\/Pouilly-Fuiss%C3%A9' target='_new'>Pouilly-Fuiss\u00e9<\/a>.<br \/>\n<br \/>\n<center><img src='http:\/\/quantum-bits.org\/wp-content\/uploads\/2010\/03\/mod3.png' alt='' align='bottom'\/><\/center><br \/>\nI&#8217;m extremely happy with the sauce. Here goes the improvised recipe: <\/p>\n<p><u>Ingr\u00e9dients \/ Ingredients:<\/u><\/p>\n<ul>\n<li style='list-style: square inside;  color:#aaaaaa;'>2 \u00e9chalottes \/ 2 shallots<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>1 verre de vin \/ 1 glass of wine<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>1 cuill\u00e8re \u00e0 soupe de fond de veau \/ 1 full spoon of &#8220;fond de veau&#8221;<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>30cl de cr\u00e8me fra\u00eeche \/ 30cl of &#8220;cr\u00e8me fraiche&#8221;<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>30g de morilles s\u00e9ch\u00e9es \/ 30g of dry morels<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>40g de beurre \/ 40g butter<\/li>\n<\/ul>\n<p><u>Recette \/ Recipe:<\/u><\/p>\n<ul>\n<li style='list-style: square inside;  color:#aaaaaa;'>R\u00e9-hydrater les morilles pendant environ 30min dans de l&#8217;eau ti\u00e8de. Egoutter et r\u00e9cup\u00e9rer 5 cl du jus \/ Rehydrate the morels for 30min. Keep 5 cl of liquid for the sauce<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Ciseller finement les \u00e9chalottes \/ Finely chop both shallots<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Porter \u00e0 \u00e9bullition le vin, les \u00e9chalottes et le jus des morilles jusqu&#8217;\u00e0 quasi \u00e9vaporation \/ bring to boil wine, shallots and the liquid you kept<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Ajouter le fond de veau, puis la cr\u00e8me fraiche. Fouetter \u00e9nergiquement \/ Incorporate &#8220;fond de veau&#8221; and &#8220;cr\u00e8me fra\u00eeche&#8221;. Whip energetically<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Lorsque la sauce s&#8217;\u00e9paissit un peu, ajouter les morilles. Baisser le feu pendant 2-3 minutes \/ add the morels when the sauce thickens. Let the sauce cook for 2-3 minutes<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Monter la sauce au beurre (incorporer le beurre en petits morceaux en fouettant vivement) \/ incorporate the butter (small pieces after one another) and whip.<\/li>\n<\/ul>\n<p><\/p>\n<p>I used a <a href='http:\/\/en.wikipedia.org\/wiki\/Pouilly-Fuiss%C3%A9' target='_new'>Pouilly-Fuiss\u00e9<\/a> wine, but a <a href='http:\/\/en.wikipedia.org\/wiki\/Vin_jaune' target='_new'>Vin du jura<\/a> would have been better. Unfortunately, this was the last bottle of white wine I had in my cellar. On the bright side, I had time for a few groceries and my fridge is unexpectedly full.<\/p>\n<p><u>Open questions<\/u>:<\/p>\n<ul>\n<li style='list-style: square inside;  color:#aaaaaa;'>Is there is an Open Source licence for recipes ?<\/li>\n<li style='list-style: square inside;  color:#aaaaaa;'>Anybody knows a good english translation for &#8220;fond de veau&#8221; ?<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Tonight&#8217;s improvisation focuses on sauce.
